How to do that with a very easy way:

At the botton of the layer palette click at the icon (ball half white/half black) > choose Hue/Saturation > move the saturation slider completely to the left side = -100 >OK ... now you have a layer with a mask(white)> with the set foreground black , paint what do you want in color.....
